Funfetti Birthday Cake

This is probably one of the most colourful cakes you could make for someone; the rainbow sprinkles/jimmies are eye catching! This is my go to cake recipe when I’m asked to bake a cake for someone’s birthday party. This recipe uses a moist vanilla sponge cake combined with rainbow sprinkles/jimmies baked inside of the cake, which is then finished off with a rich vanilla buttercream. It is quick and easy to make so it is a perfect birthday cake recipe for beginners to try.

For this cake I brought some rainbow sprinkles online as I found the sprinkles from the supermarket are not as bright and colourful when baked into the cake. If you wan to use the same sprinkles as me you can get them here!

Ingredients:

Cake (2x20cm Cakes):

225g Soften Butter/Baking Spread

225g Caster Sugar

225g Self-raising Flour

100g Rainbow Sprinkles/Jimmies

4 x Eggs

2 Tsp Vanilla Extract

1 Tsp Baking Powder

Buttercream:

250g Soften Butter

800g Icing Sugar

4 Tbsp Milk

3 Tsp Vanilla Extract

Decoration:

50g Rainbow Sprinkles/Jimmies

1. Pre heat the oven to 180C/350F/Gas Mark 4. In a large mixing bowl mix the soften butter/baking spread and sugar until the mixture becomes paler in colour.

2. Next add the vanilla extract and mix. Then add the eggs one at a time to prevent the cake batter from curdling.

3. Add the self-raising flour and baking powder and mix until the dry ingredients are fully incorporated.

4. Pour the rainbow sprinkles/jimmies into the mixing bowl and then fold the rainbow sprinkles/jimmies until they are evenly distributed through out the cake batter.

5. Divide the cake batter into two 20cm lined cake tins and then smoothen the top of the cake batter to get a flat top.

6. Bake in the oven for 20-25 minutes. The cake should be golden brown and when a skewer is placed through the middles of the cake, the skewer should come out clean.

7. Leave the cake to cool for 30 minutes. If you want to make a 4-layer cake, repeat these steps again.

8. To make the buttercream, in a large mixing bowl add the soften butter and mix until the butter becomes paler in colour.

9. Add half the icing sugar and mix again. Then add the milk and vanilla extract and mix again.

10. Finally add the rest of the icing sugar and mix. If the buttercream is not spreadable slowly add a bit more milk until you get a spreadable buttercream.

11. Layer and stack the cakes and then coat the cake with the buttercream. I have a tutorial here if you need some help!

12. Carefully press the rainbow sprinkles/jimmies around the side of the cake.

13. With the remaining buttercream pipe several rosettes on top of the cake and then sprinkle more rainbow sprinkles/jimmies over the top of the cake.
